Our School Break Camps and workshops run much like our Summer Camp structure.  We start off with some free building fun and games, then get into our big project build for the session.  Later in the day we engage in fun team building games as well as a Free Choice activity time where they can spend their time between a few rotating options.   We also spend at least 1 hour every day playing outside, and always end our day with a group wrap up circle.
